I am okay having to turn on the stove or oven for lunch, but not to then have to sit and watch and stir all the time. On that front lunch today was a failure. Cutting, sautéing, too much as my toddler was trying go high dive from the high chair. Zuchinni had to come play- I needed veggie variety!
Zuchinni and chicken
- 2tbs fake butter
- 1 zuchinni (I only ate half but cooked it all for time considerations tomorrow.)
- 3 oz rotisserie chicken
- Salt and pepper to taste
I cooked the zuchinni until nearly done and then tossed in the cubed chicken until it was warm.
Maybe tomorrow I will work on my plating.
